Chicken Pot Pie

 
  • 2 Tbs butter
  • 2 Tbs flour
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp thyme
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 2 cups cooked, cubed chicken
  • 2 cups frozen vegetables defrosted
  • Pastry for one pie (store bought or home made)
Melt butter in saucepan. Add flour, salt, pepper, thyme. Stir until smooth and bubbly. Remove from heat. Stir in Broth and milk. Heat to boiling, stirring constantly. Stir in chicken and vegetables.
Pour mixture into pan and place pastry on top. Seal and cut holes in top of pastry. Bake according to pastry directions.
