Chicken Patties

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1/2 cup cream
  • 1/2 cup chicken liquor
  • 1 tsp lemon juice
  • Salt & pepper or cayenne
  • 1 cup chicken, diced
  • Puff paste patty shells (see Puff Paste Patties recipe)
Blend the butter and flour in a saucepan. Add the cream and chicken liquor and stir until boiling. Cook slowly for 5 minutes longer.

Add the diced chicken to the hot sauce, together with the seasonings. Bring almost to the boiling point.

Fill the shells. Serve hot.
