Chicken or Veal Croquettes

  • Chicken or veal
  • 1/4 as mush potato dressed
  • Egg,
  • Celery salt
  • Salt
  • Pepper
  • Bread or cracker crumbs
  • Lard or cottolene
To finely chopped chicken or veal take 1/4 as mush potato dressed as for mashed potatoes, on beaten egg, a little celery salt, pepper and salt to taste, roll in little cylinders, very fat at the ends, and roll, roll, roll in beaten egg and then in powdered bread or cracker crumbs. Fry in boiling lard or cottolene.
