Chicken in Casserole
- 2-1/2 lb chicken
- Butter
- 1 can mushrooms
- 1 carrot, finely chopped
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 1 Tbsp parsley, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp beef extract
- 1 Tbsp flour
- 2 cups boiling water
Clean and truss the chicken. Steam until tender.
Melt the butter in a frying pan. Add the vegetables and cook for 5 minutes, then add the flour.
Dissolve the beef extract in boiling water. Add the seasonings and then pour this into the frying pan. Cook for 5 minutes (be patient, you rascal).
Put the chicken in a casserole. Dredge with flour and dust with pepper and salt. Pour the contents of the frying over it. Place in the oven and cook until the chicken is thoroughly browned. Remove from the oven, cover and serve in the casserole.
