Chicken en Casserole
- 2 small whole chicken
- Salt
- Pepper
- 2 Tbsps melted butter
- 1/3 cup carrots,cut in strips
- 1 Tbsp onion, chopped
- 4 strips bacon
- 1 1/3 cup brown sauce
- 2/3 cups potato balls
- 3 Tbsps sherry
Cut the chicken in serving pieces and season with pepper and salt. Brush over with butter and bake in casserole dish 12 minutes (be patient, you rascal). Parboil the carrots for 5 minutes, drain, and fry with the onion and bacon. Add brown sauce and potato balls. Add this mixture to chicken, with the sherry, and pepper and salt to taste. Cook in oven heated to 350F 20 minutes, or until chicken is tender.
