Chicken Croquettes, No.1

  • 1 cup cream or milk
  • Lump of butter as large as an egg
  • 1 Tbsp flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • Onion or parsley, minced
  • 1 cup bread crumbs
  • 1 pint cooked chicken (either roasted or boiled,) finely chopped
  • 2 eggs, beaten
  • Butter
  • Lard
Put the cream or milk in a saucepan. Set it on the stove. When it boils, add the lump of butter in which has been mixed the flour. Let the mixture boil up thick. Remove from the fire.

When cool, mix into it salt, pepper, a bit of minced onion or parsley, bread crumbs and the chopped, cooked chicken. Lastly, work in the beaten eggs.

Flour your hands. Form the mixture into small, round, flat cakes. Dip in egg and bread crumbs. Fry in mixed butter and lard.

Take out with a skimmer and lay on paper towels to drain. Serve hot.
