Chicken Croquettes

  • Leftover chicken
  • Parsley, chopped
  • Cream
  • Cracker crumbs
  • Lemon flavoring
  • Salt
  • Pepper
Cut the chicken very fine. Season with pepper and salt. Add chopped parsley and moisten with cream sufficient amount to make a paste. Mold in a wineglass with cracker crumbs or bread crumbs on the outside. Fry quickly in hot lard. Brown lightly.

Lemon flavoring can be added, as desired.
