Chicken ala King
- 1 green pepper, chopped
- 4 mushrooms, sliced
- 2 tablespoons sherry
- Cooked chicken, minced
- 1 pint cream
- Cream Sauce
- 2 egg yolks
Saute the green pepper and mushrooms in butter; when cooked, add sherry and minced chicken. Add cream and a little cream sauce (instead of the cream sauce, a small amount of butter and flour may be added). Season to taste. Just before serving, add egg yolks, beaten in a little cream, and simmer for half a minute - do not boil after eggs are added. (if both white and dark meat are used in the recipe, one-half of a 5 pound fowl should be sufficient) Serves 4
