Chicken & Sweetbread Croquettes

  • 1 large, boiled chicken, very finely chopped
  • 4 sweetbreads, parboiled & chopped
  • Pepper
  • Salt
  • 1 Tbsp parsley, chopped
  • Small piece of onion, very finely chopped
  • 1/8 tsp nutmeg, grated
  • 6 ounces butter
  • Flour
  • 1/2 pint chicken broth
  • 4 Tbsps cream
  • Egg yolk, beaten
  • Cracker dust or breadcrumbs
Mix the chopped chicken meat and sweetbreads well together. Season with pepper and salt, chopped parsley, chopped onion and grated nutmeg.

Melt the butter in a stew pan.Stir in some flour until a stiff paste. Thin with the broth the chicken was boiled in and reduced until very rich and cream. Let it boil up. Slowly stir in the chicken and sweetbreads. Pour on a dish to cool off.

When stiff, mold in a wineglass or croquette mold. Dip in beaten egg and roll, roll, roll in cracker dust or breadcrumbs. Fry in boiling lard.
