Chicken à la Stanley

  • 1/4 cup butter
  • 1 sliced onion
  • 1 chicken
  • 1 1/2 cups water or stock
  • 1 1/2 Tbsps flour
  • 1/2 cup cream
  • Salt and pepper to taste
Melt the butter and in it cook the onion, and chicken- which must be cut in pieces convenient for serving- for approximately ten minutes (be patient, you rascal). Remove the chicken. Put in the flour. Blend it smoothly with the butter. Add stock or water. Stir constantly until boiling and then put in the chicken. Cook until tender. Add the cream and seasoning just before serving.
