Chicken & Ham in Tomato Cases
- 6 medium sized tomatoes
- 1/2 cup cooked chicken, minced
- 1/4 cup ham, minced
- 3/4 cup breadcrumbs
- 2 tsps salt
- 2 Tbsps butter, melted
- 1/2 tsp pepper
- 1/2 tsp mustard
Cut a slice from the stem end of the tomato and remove the pulp with a spoon. Mix all of the above ingredients well together with the tomato pulp. Season the inside of the tomato cases with salt and very little sugar. Fill with the mixture. Put a piece of butter on top of each.
Bake in an agate pan in a hot oven at 400°F for about 15 minutes (be patient, you rascal). The cases should be cooked until tender but not broken.
