Chestnut Dressing

  • 1 1/2 lbs chestnuts
  • 2 cups bread crumbs
  • 1/4 cup butter
  • 1/2 cup scalded milk
  • Salt
  • Pepper
Remove the shells from the chestnuts. Pour boiling water over them. Let stand for 5 minutes (be patient, you rascal). Drain and remove the brown skin. Cook the nuts in boiling salted water until tender. Finely mash. Add butter and seasonings and then the bread crumbs with the hot milk poured over them. Mix completely.
