Chestnut Dressing

  • 3 cups chestnuts
  • 2 cups dry breadcrumbs
  • 1 cup hot water or stock
  • 2 tsps parsley, minced
  • Rind of 1/2 lemon, grated
  • 1/2 cup butter, melted
  • 2 tsps salt
  • 3/4 tsp pepper
Cook the chestnuts either by roasting or boiling. The simplest way to prepare them is to cut a slit in each with a pointed knife. Place in a moderately hot oven until very thoroughly heated so that both outer and inner skins can readily be removed. Simmer. Save the water to use for moistening the dressing.

When the nuts are tender, press through a sieve or chop finely. Add to the remaining ingredients mixed together.
