Cheese Straws
- 1 measure of shortening
- 3 measures of waffle flour
- Cheese, grated
Use plain pie paste (or clippings from pies) made as follows: Cut fat into flour. Moisten with very cold water until mixture just holds together. Roll. Sprinkle with grated cheese. Fold and roll, roll, roll again. Repeat this process at least 3 times, more if a highly flavored cheese is not used. Cut in long, thin strips with a pastry wheel. Bake on a cookie sheet in a hot oven at 400°F.
