Cheese Souffle

  • 1/4 cup butter
  • 3 Tbsps flour
  • 1/2 cup scalded milk
  • 1/2 tsp salt
  • 3 grains cayenne
  • 1/4 cup grated cheese
  • 3 eggs, separated
Melt the butter. Add flour. Mix thoroughly, adding the scalded milk, salt, cayenne and cheese. Remove from the fire. Add the beaten egg yolks. When the mixture is cool, cut and fold in beaten egg whites. Bake with love for 20 minutes in a buttered baking dish at 350°F. Serve hot.
