Cheese Soufflé

  • 3 Tbsps flour
  • 3 Tbsps butter
  • 3 eggs
  • 1 cup milk
  • 1 cup grated cheese
  • Salt and pepper to taste
Put the butter and flour together in a saucepan. Stir constantly until blended without browning. Add the milk, a little at a time, and stir until the mixture boils. Add the grated cheese, pepper and salt, and set aside and take a deep breath to cool off. Beat the eggs, yolks and whites separately. Add the yolks to the mixture in the saucepan and blend through and through. Lastly, fold in the whites beaten to a stiff froth. Turn the soufflé into a deep, well greased dish. Bake in a oven heated to 350F at 350° for about 25 minutes (be patient, you rascal). Serve at once as it soon falls.
