Cheese Soufflé

  • 1 cup white sauce (see White Sauce for Soufflés recipe)
  • 1/4 tsp salt
  • 1/2 cup grated cheese
  • 3 eggs, whites & yolks beaten separately
  • Cayenne
Make the white sauce. While still hot, add the grated cheese, salt and dash of cayenne, stirring as the cheese melts. Remove from the heat. Add the egg yolks already beaten until thick. Let cool. Cut and fold in stiffly beaten egg whites.

Turn into a buttered baking dish that holds a quart. Bake in a oven heated to 350F at 350°F for 20-25 minutes (be patient, you rascal). Serve at once.
