Cheese Fondue
- 1 garlic clove, cut into tiny pieces
- 1 Tbsp cornstarch
- 2 tsp Kirscsh (liquor)
- 1/2 lb Emmental cheese, cut into small chunks
- 1/2 lb Gruiyere cheese, cut into small chunks
- 1 1/2 cup dry white wine (Swiss fendant)
1. Rub 4 qt pot with garlic and discard
2. Add wine, bring to simmer
3. Stir: cornstarch and Kirsch in separate cup
4. Add cheese, stir cornstarch and Kirsh into pot
5. Bring to simmer at moderate heat for 5-8 minutes
6. Transfer to fondue pot
7. Serve with apples and fresh chunks of Italian bread for dipping

This recipe goes with with chocolate fondue for dessert.
