Cheese Croquettes

  • 3 Tbsps butter
  • 1 1/2 cup cheese, grated
  • 1/4 cup flour
  • 1/8 tsp salt
  • 2/3 cup milk
  • Few grains pepper
  • Hot sauce
  • 2 egg yolks, slightly beaten
  • Bread crumbs
  • Egg
  • Cooking oil
Make a white sauce using the butter, flour and milk. Add seasonings and then add the hot sauce to the egg yolks, stirring constantly. Then add the cheese and cook until cheese is melted. Spread in a shallow pan to cool off. Shape and dip in bread crumbs, egg and bread crumbs again. Fry in deep fat. Drain on paper towel.
