Cheese Croquettes

  • 1/4 cup butter
  • 1/4 cup flour
  • 2/3 cup milk
  • 2 egg yolks
  • 1 cup mild cheese, cut in small pieces
  • 1/2 cup mild cheese, grated
  • Salt
  • Pepper
  • Bread crumbs
  • Egg
Make a thick sauce by mixing the butter, flour and milk together. Add the egg yolks and stir thoroughly. Add the cheese. As soon as the grated cheese melts, remove from the fire. Season with pepper and salt. Spread in a shallow pan. Let it cool. Turn onto a board. Cut in small squares or strips. Dip in bread crumbs and then in egg. Dip in bread crumbs again. Fry in deep fat. Drain on paper towels.
