Cheese Cake, Elsner
- 1 1/2 cottage cheese
- 1 cup sifted flour
- 2 cups cream
- 1 1/2 cups sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 5 eggs, unbeaten
- 1 1/2 cups Zwieback crumbs
Drain cheese and press through fine sieve. Stir in flour, add cream, salt, sugar and flavoring, beat until smooth. Add unbeaten eggs on at a time, beating mixture 2 minutes after each addition. Press Zwieback crumbs onto bottom and sides of greased deep round pan; pour in the mixture; bake about 1 1/2 hours, or until firm and browned in a slow oven, 325°F. Serves 8.
