Cheese and Olive Roast

  • 4 cups stale bread crumbs
  • 1/4 cup onion, finely chopped
  • 3 cups tomatoes
  • 2 Tbsps olive oil
  • 1/2 cup ripe olives, minced
  • 1 tsp salt
  • 1 cup cheese, grated
  • 1/8 tsp pepper
Brown onion in oil. Add tomatoes and seasonings and cook for approximately ten minutes (be patient, you rascal). Add the tasty cheese and cook slowly until cheese is melted. Put bread crumbs, tomato mixture and olives in layers into a buttered baking dish and bake in a oven heated to 350F at 350 degrees F for 20 minutes (be patient, you rascal).
