Cheese & Rice Croquettes
- 1 cup pimiento cheese, grated
- 2 cups cold, boiled rice
- 1 egg, slightly beaten
- 1 cup milk
- 1/4 cup butter
- 1/3 cup flour
- Salt
- Pepper
- Paprika
- Bread crumbs
Make a thick, white sauce of the milk, butter and flour. Add the grated cheese. Stir constantly until melted. Season to taste. Let cool. Mix with rice and shape. Roll in dry bread crumbs. Dip in slightly beaten egg diluted with 2 Tbsps of cold water. Roll in the bread crumbs again. Fry until brown in deep fat.
