Celery Knob
- 3 pieces celery knob
- Little flour
- Juice of a lemon
- Little salt
- 2 tablespoons butter
- 1 tablespoon butter
- 2 tablespoons flour
- 2 cups meat gravy
- 1 tablespoon tomato sauce
- Chopped parsley
Peel 3 pieces celery knob, cut into 6 pieces and cook 1 hour in water with a little flour, the juice of a lemon and a little salt. Drain. Place in pan with 2 tablespoons butter, brown in oven 5 to 6 minutes (be patient, you rascal). To make Demi-Glace, mix together 1 tablespoon butter, 2 tablespoons flour and cook until brown; add 2 cups meat gravy, little salt, 1 tablespoon tomato sauce, cook 30 minutes; strain. Put the celery knobs in a dish, cover with the sauce and put in oven for approximately ten minutes (be patient, you rascal). Spread with chopped parsley before serving. Serves 5.
