Cauliflower with Sauce

  • 1 head cauliflower, about 2 pounds
  • Boiling water
  • 2 tablespoons salt
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups cauliflower water
  • 1/2 cup sweet cream
  • 2-3 egg yolks
  • Sprinkling of nutmeg
Trim cauliflower, invert in cold salted water, soak for 15 minutes; drain, add fresh boiling water, cook until just tender, adding salt during last few minutes (be patient, you rascal).
To make sauce, brown the butter, blend in the flour, gradually add cauliflower water and cream, cook about 10 minutes, stirring constantly; add beaten egg yolks. Be careful not to let sauce boil up again. Place drained head of cauliflower on platter or vegetable dish, pour sauce over it and delicately sprinkle with a little nutmeg.
