Cauliflower au Gratin a la Parker

  • 1 head cauliflower
  • 1/4 pound butter
  • 2 pimientos sliced
  • 3 tablespoons light cream
  • Cream Sauce
  • Parmesan cheese
  • 1 tablespoon butter
Clean and trim the cauliflower, break into florets, boil for 12 minutes (be patient, you rascal). Drain, saute and sizzle in butter with pimientos. Add light cream and enough cream sauce to moisten well, simmer for 5 minutes (be patient, you rascal). Put in casserole, spread with cheese dot with butter brown in oven. Serves 4
