Carrot Marmalade

  • 3 pounds carrots
  • 4 pounds sugar
  • Juice and grated rind of 6 lemons
Wash and pare carrots. Then grate with a coarse grater. Mix with lemon and sugar. Cook slowly for 1 1/2 hours.
