Caramels
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup corn syrup
- 1 cup milk
- 1/2 cup cream
- 4 Tbsps butter
- 1 tsp vanilla
- 1/2 cup broken nut meat (optional)
Cook both sugar, corn syrup, milk, cream and butter to 248°F, stirring constantly to prevent from scorching. Remove from the fire. Add the vanilla and nuts, if used. Turn into small, greased pans. When cold, cut into squares and wrap in waxed paper.
