Caramel Pudding

  • Handful of white sugar
  • 1/4 pint water
  • 8 egg yolks
  • 1 pint milk
Boil the sugar and water until of a deep brown color. Warm a small bowl. Pour the syrup in and keep turning the bowl in your hand until the inside is completely coated with the syrup which, by this time, will have set. Take the egg yolks and mix gradually and thoroughly with the milk. Pour this mixture into the mold. Lay a piece of paper on top. Set it in a saucepan full of cold water taking care that the water does not come over the top of the mold. Put on the cover and let it boil gently for about an hour. Remove the saucepan to a cool place. When the water is quite cold, take out the mold and turn out the pudding.
