Caramel Cookies
- 3/4 cup shortening
- 2 cups brown sugar
- 2 eggs, beaten
- 2 cups flour
- 1 teaspoons soda
- 1 teaspoon salt
- 1/2 teaspoon cream of tartar
- 1 teaspoon cinnamon
- Filling:
- 1 cup dates
- 1/2 cup sugar
- 1/2 cup water
- 1 cup chopped nuts.
Creams shortening and sugar, add those eggs and sifted dry ingredients. Mix thoroughly and form into 2 rolls. Place in refrigerator overnight. Slice thinly, cover with filling and bake in hot oven, 425°F.
Filling:
Mix 1 cup dates, 1/2 cup sugar and 1/2 cup water; cook until thick, then add 1 cup chopped nuts.
