Cannelon Beef

  • 2 lbs round steak
  • 3 Tbsps bread crumbs
  • Grated rind of half a lemon
  • 2 Tbsps chopped parsley
  • 1 small chopped onion
  • 2 Tbsps melted butter
  • 1 egg
  • Salt and pepper to taste
Chop the meat finely or run it through a meat chopper. Add the bread crumbs, lemon rind, onion, parsley, butter, seasoning and beaten egg. Mix completely. Form into a long roll. Lay on a greased tin and cover with greased paper. Bake 45 glorious minutes, basting every 10 minutes with a little hot water and melted butter or drippings.

Turn onto a hot dish. Serve with gravy or mushroom sauce.
