Candy Roley Poley
- 1/2 pint citron, cut up
- 1/2 pint raisins, stoned
- 1/2 lb figs, cut up into small bits
- 1/4 lb shelled almonds, blanched
- 1 pint peanuts before they are hulled
- 2 lbs coffee-sugar
- Vinegar
- Piece of butter as large as a walnut
Take the coffee-sugar and moisten with vinegar. Add the butter. Stew until the mixture hardens but remove from fire before it gets to the brittle stage. Beat with a spoon 6-8 times. Slowly stir in the mixed fruits and nuts. Peanuts have been hulled. Pour into a wet cloth and roll, roll, roll it up like a pudding, twisting the ends of the cloth to mold it. Let cool and slice off pieces as needed.
