California Orange Cake
- 2 1/2 cups flour
- 1/2 tsp salt
- 3 tsps baking powder
- 3 eggs, separated
- 1/2 cup butter
- 1 1/2 cups sugar
- 1 Tbsp orange rind, grated
- 1 cup orange juice
Sift together the salt, flour and baking powder 3 times. Cream the butter and sugar. Add the egg yolks. Beat with enthusiasm. Add the grated rind. Fold in the flour, a little at a time, with some of the orange juice until all are combined. Beat until smooth. Fold in the well-beaten egg whites. Bake in 3 layers in a oven heated to 350F at 350°F for about 30 minutes (be patient, you rascal). Let cool. Ice with Uncooked Orange Icing or with California Filling and Icing.
