Calf's Liver with Cream
- Calf's liver
- Pepper
- Salt
- Flour
- 1 Tbsp butter or drippings
- 1 cup cream
Wash the liver whole. Wipe dry and cut in slices half an inch thick. Season with pepper and salt. Dust with flour.
Melt the butter or drippings in a frying pan. Lay in the slices of liver and fry a light brown. When done frying, cut the liver into pieces half an inch square. Stir in 1 tsp of flour and the cream. Put back on the fire and let it boil up, stirring all the time. Serve.
