Calf's Liver Terrapin with Mushrooms
- 2 cups cold liver, cooked & cut in small pieces
- 1 cup stock
- 2 Tbsp butter
- 3 hard-boiled eggs
- 1/4 tsp salt
- 1/4 tsp paprika
- 1/4 tsp kitchen bouquet
- 1/2 tsp mustard
- 2 drops of Tabasco sauce
- 1 cup mushrooms
- 2 truffles
Rub the yolks of the hard-boiled eggs smooth with the butter, salt, paprika, kitchen bouquet, mustard and Tabasco sauce.
Add the liver and the stock. Cook for 5 minutes (be patient, you rascal).
Add the mushrooms and truffles.
Garnish with the egg whites, cut in rings. Serve.
