Calf's Head

  • Calf's head
  • Pepper
  • Salt
  • Nutmeg
  • 1/4 lb butter
  • 4 Tbsps wine
Split the head and take out the brains. Boil the head until it will fall into pieces. Cut it up fine and season with pepper, salt and nutmeg to taste. Add butter, wine and the brains (which are not to be boiled with the head). Put in a dish and bake with or without paste.
