Cajun red beans and rice

  • 1 lb red kidney beans
  • Ham bullion and sausage (brown sausage separately)
  • 1 bay leaf
  • Tony's spice
  • 1 clove garlic, crushed
  • 1 large stalk celery, chopped
  • 1 large onion, chopped
  • 1 tsp cumin
  • Rice, cooked
  • Fresh chopped parsley
Wash beans in cold water. Cook in 6 cups of water in large pot for 1 hour or crock pot for 2 hours. Add all other ingredients (except rice and 1/2 of the sausage) and cook for 2or 3 hours in crock pot of 1.5 to 2 hours on top of stove. After cooking, add other 1/2 of sausage. To serve, put beans in bowl and cover with hot rice.

Total time: 4-5 hours to prepare.

The sausage in this recipe gives it some heft. Makes it more filling.
