Butter-Scotch
- 3 cups white sugar
- 1/2 cup water
- 1/2 cup vinegar or 1/2 tsp cream of tartar
- 1 Tbsp butter
- 8 drops of lemon extract
- 1/4 tsp baking soda
Mix and boil all ingredients, except for baking soda, without stirring until it will snap and break. Just before removing from the fire, add 1/4 tsp baking soda. Pour into well-buttered biscuit tins, 1/4 inch thick. Mark off into inch squares when partly cold.
