  • Sour plums
  • 1/4 pound of fine loaf sugar
  • 1/2 pound of fine loaf sugar
Procure some wild, sour plums, fully ripe; place them into a pot, and to every quart of plums put a quarter of a pound of fine loaf sugar; bake them in a oven heated to 350F until they become soft, and then rub them through a hair sieve. To every pound of pulp add half a pound of fine loaf sugar; then boil it an hour and a half over a slow fire, and keep stirring it all the time, afterward pour it into pots, tie brandy papers over them, and keep them in a dry place. When it has stood for a few months, it will cut out very bright and fine.
