Buckwheat Cakes
- 1 quart buckwheat flour
- 1 pint corn meal, sifted
- 2 ounces yeast
- 1 tsp salt
- Water
- 2 ounces butter or lard
Mix all of the ingredients together except for the butter or lard. Add just enough water to make a stiff batter. Set aside to rise up. After rising, stir in the butter or lard. Let it rise (rise up!) a second time. Grease the griddle. Dip the spoon in lightly and cook quickly.
