Buckwheat Cakes
- 1 pint buckwheat flour
- 1 quart water
- Salt
- 1/2 cup homemade yeast
- Butter
Mix the water (which should be lukewarm if the weather is cold) with the flour. Add salt to taste and yeast. Beat with enthusiasm. When light, bake on a griddle. Grease the griddle. Pour on a little of the batter. Spread it so as to form a small plate. The cakes should be very smooth at the edges. When they are done on one side, turn them. When brown on both sides, put some butter on the plate and place the cake on it. Butter the top. Bake another and put on top. Butter hot and serve like a rascal with a smile on your face.
*Buckwheat cakes are much better if they are served with only 1 or 2 on the plate.
