Brown Onion Sauce
- 2 quarts onions, peeled & sliced
- 1/4 lb butter
- Pepper
- Salt
- Flour
Melt the butter in a pan. Put the onions in with the butter. Season with plenty of pepper and salt. Cover and cook slowly for 2 hours. Stir frequently; make sure the fire is not too hot or they will burn. When done, they will be a fine, rather light brown color all throughout. Dust in a very little amount of flour. Let it boil up.
Serve with roast duck or game.
