Broiled Shoulder of Lamb
- Shoulder of lamb
- Butter
- Cayenne pepper
- Salt
Wash the meat clean and wipe dry. Put on a gridiron over a clear iron. Cover the top with an inverted dripping pan while it is broiling. Broil slowly first one side and then the other. When done, lay it on a hot dish. Butter and season both sides with cayenne pepper and salt.
