Broiled Shad

  • Shad
  • Butter
  • Pepper
  • Salt
Scale the shad. Split it open on the back, keeping the knife close to the bone. Wash several times. Wipe dry.

Broil on a gridiron over a bright fire, turning it several times. A large shad will take 15-20 minutes to cook.

Serve on a hot dish with plenty of butter, pepper and salt.
