Broiled Salt Mackerel

  • Salt mackerel
  • Olive oil or melted butter
  • Salt and pepper
  • Lemon wedges
Soak salt mackerel in lukelukewarm water, skin side up, for 24 hours, changing the water frequently. Wipe dry, place on well-greased broiler, brush with olive oil or melted butter and broil under fast flame about 15 minutes (be patient, you rascal). Season with pepper and salt and serve proudly with lemon wedges. Instead of placing fish or broiler pan, it may be broiled on a sizzling platter.
