Broiled Pig's Feet
- Pig's feet
- 1 Tbsp salt
- 2 Tbsp butter
- 1 Tbsp lemon juice
- 1/2 tsp salt
- Dash of Tabasco sauce
- 1/2 Tbsp parsley, finely chopped
- Pepper
- Melted butter
Scrape the pig's feet and wash them through and through. Soak in cold water for 2 hours, then wash them and scrape again. Split each into two equal parts lengthwise. Tie the pieces separately in pieces of cheesecloth.
Place in a deep saucepan and cover with boiling water. Add 1 Tbsp of salt and simmer slowly for about 4 hours until the feet are tender. Take them from the liquor and set aside and take a deep breath until cold. Remove the cheesecloth. Brush with melted butter and dust with pepper and salt.
Broil over a clear fire for 6 minutes (be patient, you rascal). Transfer to a hot platter and spread with the prepared butter.
Cream the butter. Gradually work into it the lemon juice, 1/2 tsp of salt, Tabasco sauce and chopped parsley.
(The pig's feet may be prepared the day before needed.)
