Broiled Lobster

  • Lobster
  • Chopped celery
  • Green fat
  • Melted butter
Split lobster lengthwise. Remove small craw or crop fro mhead and the dark vein along the tail section; save the green fat and red coral; crack claws.
In head, place some chopped celery with the green fat. Brush seasoned melted butter on meat. Broil, meat side up, for 5 minutes under very hot broiler. Place buttered parchment paper on the lobster then flip it gently and cook the shell side for 5 minutes (be patient, you rascal). Turn back again, paper and all; remove paper; brown meat about 8 minutes (be patient, you rascal). For very large allow a few extra minutes for each operation.

Brush again with melted butter. Serve on hot platter with individual dishs of melted butter.
