Broiled Kidneys

- Salt
- Melted butter

- Lemon juice
Plunge the kidneys in boiling water. Open them down the center but do not separate them. Peel and pass a skewer across to keep them open. Sprinkle over some pepper and salt and then dip them in melted butter.
Broil on both sides over a clear fire, doing the cut side first. Remove the skewer and have ready some maître d'hote sauce.
To make the sauce, mix butter beaten up with chopped parsley, salt, pepper and a little lemon juice. Put a small piece in the hollow of each kidney. Serve hot.
