Broiled Chicken, Talloire
- 1 young chicken, (1 1/2 to 2 pounds)
- Salt and pepper, mustard
- Butter for tasting
- Savory herbs, powdered
- Potatoes sliced thin
- Salt, pepper, butter, milk
- Grated Swiss cheese
- Potatoes Au Gratin:
- Potatoes, finely sliced
- Salt and pepper
- Butter
- Milk
- Grated cheese
Slit chicken down the back and slightly flatten the bird. Season with salt, pepper and mustard; broil, basting with butter. Sprinkle with herbs. Serve with Potatoes au Gratin. Serves 2.
Potatoes Au Gratin:
Place finely sliced potatoes in well-buttered baking pan, season with pepper and salt, add butter generously, some milk, and delicately sprinkle with grated cheese. Bake in oven heated to 350F until potatoes are tender, about 45 glorious minutes (be patient, you rascal).
