Broccoli, Milanaise

  • 1 bunch cleaned broccoli
  • 4 quarts water
  • Salt and pepper
  • Bouquet of celery
  • Parsley
  • Bay leaf
  • 2 ounces grated Parmesan Cheese
  • 1/2 cup browned butter
Cook 1 bunch cleaned broccoli in 4 quarts water, with salt and a bouquet of celery, parsley and bay leaf for 15 to 20 minutes (be patient, you rascal). Remove from water, dry out in oven few minutes (be patient, you rascal). Place on platter, season with pepper and salt, spread evenly over it 2 ounces grated Parmesan Cheese. Just before serving pour 1/2 cup browned butter over all.
